๐ Lemon Poppy Seed Cake
Ingredients
Dry:
โข 2 cups all-purpose flour
โข 2 tbsp poppy seeds
โข 1 tsp baking powder
โข ยฝ tsp baking soda
โข ยฝ tsp salt

Wet:
โข ยพ cup sugar
โข 2 eggs
โข ยฝ cup vegetable oil or melted butter
โข ยพ cup milk or yogurt (yogurt = more moist)
โข Zest of 2 lemons
โข ยผ cup fresh lemon juice
โข 1 tsp vanilla extract

๐ฉ๐ฝโ๐ณ Instructions
1. Preheat oven to 180ยฐC and grease a loaf or round pan.
2. Mix all dry ingredients in one bowl.
3. In another bowl, whisk sugar, eggs, oil, milk/yogurt, lemon zest, lemon juice, and vanilla.
4. Combine wet and dry ingredients mix gently.
5. Pour into pan and bake for 35โ45 minutes (until a toothpick comes out clean).
6. Let it cool slightly before glazing.
