Lemon Poppy Seed Cake

๐Ÿ‹ Lemon Poppy Seed Cake

Ingredients

Dry:
โ€ข 2 cups all-purpose flour
โ€ข 2 tbsp poppy seeds
โ€ข 1 tsp baking powder
โ€ข ยฝ tsp baking soda
โ€ข ยฝ tsp salt

Wet:
โ€ข ยพ cup sugar
โ€ข 2 eggs
โ€ข ยฝ cup vegetable oil or melted butter
โ€ข ยพ cup milk or yogurt (yogurt = more moist)
โ€ข Zest of 2 lemons
โ€ข ยผ cup fresh lemon juice
โ€ข 1 tsp vanilla extract

๐Ÿ‘ฉ๐Ÿฝโ€๐Ÿณ Instructions
1. Preheat oven to 180ยฐC and grease a loaf or round pan.
2. Mix all dry ingredients in one bowl.
3. In another bowl, whisk sugar, eggs, oil, milk/yogurt, lemon zest, lemon juice, and vanilla.
4. Combine wet and dry ingredients mix gently.
5. Pour into pan and bake for 35โ€“45 minutes (until a toothpick comes out clean).
6. Let it cool slightly before glazing.
